Abstract
This study discusses the possibility for a quantitative evaluation of pectin macromolecules bydratation, by measuring the refractive index (RI) of their solutions, using a differential laser refractometer and a laboratory-type interferometer, LI-3, Rayleigh-type. The results obtained have been discussed according to the theory of Ikegami for polyelectrolytes hydratation. Refractometer measurements of ethanol, methanol and water have been done. A theroretical link between the models of Selmeyerand Lorentz-Lorenz has been established, and by means of this link the number of electrons per volume unit of the alcohols indicated has been calculated.
